Gluten Dairy Free Cooking Vegan and Cream of Broccoli Soup!
5 ingredients, 30 minutes to make Vegan “Cream” of Broccoli soup! This delicious Cream of Broccoli Soup will fill you up and it is packed with antioxidants and good for you greens! Let me know how you like it!
Ingredients
- 2 tablespoons of organic oil such as avocado tea seed or coconut
- 1 large organic onion sliced
- 1 head of organic broccoli can also use cauliflower, cut into florets and stalk peeled if tough and cut into pieces
- 2 cloves of garlic chopped
- Salt and pepper to taste
- 1/2 cup of white wine optional
- 3 cups of organic vegetable broth
- 1 cup of cashew cream recipe below or coconut milk
Instructions
- Put the oil in a large, deep saucepan on medium heat. Once the oil is headed add the onion, broccoli, garlic, salt and pepper. Cook until the onion is transparent, about 10 minutes. Add the wine if you’re using it and cook another minute or two. Add the vegetable broth and cook until the broccoli is tender, about 10 minutes. Let the soup cool enough that it is safe to put it into a blender. Blend until it reaches the consistency you like. Add the cashew cream or coconut milk, reheat as needed, season to taste and serve.
- [Cashew cream Recipe: take 3/4 cup of organic raw cashews and 1/2 to 3/4 cup of purified water and blend on high speed until you have a smooth consistency. You can make the cream thicker or thinner by using more of less water.
- Soaking cashews for about 30 minutes beforehand will speed up the process. You will need a high speed blender to make the milk. If you don’t have one, then soak the cashews for several hours or overnight by just covering them with water. This will soften them and make them much easier to blend.]
