Homemade Nachos and Salsa

When you typically think of nachos, healthy food is not what comes to mind.Instead one imagines the cheese-laden, lard-filled beans, served over chips cooked with rancid oil. Okay, maybe you don’t think of it that way, but I certainly do. Nachos can be very tasty, but when you’re trying to eat healthy, ordering them in a typical American restaurant isn’t a good idea. What is a great idea is to make them at home. It’s fun; you can design them exactly the way you like, and they are truly healthy while being delicious at the same time. Truly a win-win. Ingredients
  

  • 1 bag Siete Foods Tortilla Chips – this is a great brand that is both corn and gluten-free
  • Miyokos Cheese for melting – Miyokos is available at Whole Foods and other healthy grocery stores; it’s a non-dairy cheese substitute that’s amazing.
  • 1 organic bell pepper
  • 1 can organic black beans
  • 1 organic red onion
  • Cherry tomatoes
  • Cilantro
  • Organic green onions
  • Organic garlic cloves
  • Salt & pepper to taste.
  • 2 organic large tomatoes
  • 2 organic bell peppers
  • 1 organic red onion
  • Salt & pepper to taste
  • Squeeze lemon to taste

Instructions
 

Method Nachos

  • Preheat oven to 350 degrees.
  • Chop veggies & rinse beans.
  • Put chips on bottom and top with the rest of ingredients. Add salt & pepper.
  • Transfer nachos to oven for about 10 minutes or until cheese has melted.
  • Top with cilantro & serve with fresh salsa.

Method Salsa

  • Preheat oven to 350.
  • Chop veggies & roast veggies for 25 minutes.
  • Let cool and blend in blender.
