Homemade Almond Milk, Fast and Easy
Can you make your own organic almond milk in minutes? I bring good news! I don’t know if you’ve ever tried to make your own almond milk, but it’s anything but quick. Almonds have a skin and the skin must be removed. Traditional almond milk involves meticulously removing the skin from each almond before turning it into milk and further, straining it through a cheese cloth to ensure no pieces of almonds remain. That would be a labor of love and one I (and likely you) do not have time for. Sometimes the kitchen can be the place of happy accidents. You’re trying to create one thing and you create something different, but really good! It happens to me all the time but this “accident” really excited me. There I was trying to make a chia pudding when I stumbled on a delicious, easy and fast almond milk recipe. I know, chia pudding to almond milk sounds like a stretch, but that is what happened. I present for you an almond milk that is sweet, delicious and whipped up in mere minutes. You don’t need to remove almond skins or strain the finished product.
Ingredients
- 1/4 cup organic almonds
- 1/4 cup pitted organic dates soaked for at least 20 minutes in hot water.
- 2 cups filtered water
- Optional: cacao powder vanilla extract, organic strawberries for flavoring the milk
Instructions
- Take the almond, well soaked dates and 3/4 cup of the water and blend together until smooth and creamy. The milk will be quite thick at this point. Add the rest of the water 1/4 to 1/2 cup at a time until you get the desired consistency of milk. It all depends on your taste and what you’re using it for.
- If you want to make “chocolate milk” add 1 – 2 Tablespoons organic cacao. For vanilla milk, add 1/4 teaspoon of vanilla extract, and if you want to tickle someone’s fancy with some pink strawberry milk, add 1/4 cup of fresh or frozen organic strawberries.
