Homemade Sugar-Free Dark Chocolate
Homemade & easy to make no-sugar chocolate!Do you love chocolate? I do. I used to be quite addicted, truth be told, but as I got healthier my sweet tooth became very manageable and while I always like the taste, I don’t “have to” have it the way I used to. You hear people speaking of the health benefits of chocolate and that isn’t untrue, it’s just that the benefits can take a backseat to all the negatives of chocolate that has milk, sugar and a variety of other chemicals, flavorings and additives. As I became fully plant-based in my diet, I rather easily became sugar-free. I actually didn’t even miss dessert, which was rather miraculous considering I used to truly be an addict. But I’m here for you and if you like healthy desserts it’s my job to provide. There are a few desserts on the site that are raw (the No-Bake Brownies ARE amazing, truly) and they utilize no sugar. But when it came to the ease of buying chocolate chips, let’s say, there’s really not a no-sugar alternative unless it has unhealthy chemicals. Lately we’ve been obsessed with the Best Energy Bites recipe, and while I wanted to use raisins or something instead of chocolate, you asked me to keep the chocolate. My conscience couldn’t take it – I HAD to come up with a chocolate chip that was completely sugar-free AND delicious AND easy to make.I already had cocoa butter in my refrigerator, purchased for some healthy recipe that I never ended up making. As I thought about it, what really was chocolate. Cocoa butter, cacao, a sweetener and then some flavor such as vanilla, etc. So…. I played with it and I am very pleased to announce this recipe is truly a winner. Four easy ingredients, made in mere minutes and so delicious. As I was contemplating how to make it I was at a cooking store and found some chocolate molds. I checked them out to ensure pouring hot chocolate wouldn’t be toxic and was assured they were safe to use. You absolutely don’t need to use molds, you can simply pour the chocolate over parchment paper in a glass dish and create your own “bark” of whatever thickness you desire. But the molds made the chocolate seem so professional I couldn’t resist. If the recipe calls for chocolate chips, just chop up this chocolate to the appropriate size. This is TRUE chocolate with all its creaminess and goodness, all its wonderful magnesium, phytonutrients, antioxidants, calcium, boost your immune system, improve your memory, improve your mood – amazing right? Have fun with these. If using molds, fill them half full and then add toasted nuts, nut butter, raisins, other dried fruit, or flavorings such as peppermint, almond, or whatever you like. Then fill the rest of the mold, refrigerate and impress your friends and family!Please let me know how you enjoy this recipe!
Ingredients
- 1 cup organic raw cocoa butter melted
- 1 cup organic raw cacao powder
- 4-5 Tablespoons organic date syrup could use granulated date sugar as well
- 1 teaspoon organic vanilla extract
- Pinch Himalayan sea salt
- Optional filling ingredients: toasted organic chopped nuts nut butter, dried fruit or natural flavorings such as almond extract or peppermint or even coffee.
Instructions
- Get a double boiler going over low to medium heat. You want to begin by melting the raw cocoa butter. It comes in chunks, so just estimate about how much will equal 1 cup. As it melts you can pour it in a 1 cup measure to determine if you need more. Remember to use low to medium heat and don't let the water touch the bottom of the double boiler.
- Pour the melted cocoa butter into a medium bowl and add the cacao powder, date syrup, vanilla and salt until they are fully combined.
- If you're using molds to make "pretty" chocolate, fill the molds partially (if adding fillings) or completely and then lightly drop the molds onto a flat surface to eliminate any air bubbles.
- Place into the refrigerator for a minimum or 2 to 3 hours, unmold the chocolates and enjoy!
- You can toast nuts and chop them as fillings are sprinkled on top; you could also try nut butters, dried fruit or natural flavorings such as almond or peppermint.
