Peachy Pineapple Smoothie Bowl
Smoothie BowlSometimes the kitchen can be the site of a happy accident. This recipe was one such occasion. My son wanted a “new” smoothie flavor so we got some frozen fruit options we typically don’t get, peaches, pineapple and mango, and I started experimenting. Due to the frozen nature of the fruit and the amount I used, the “smoothie” was very, very thick. So much so I ended up eating it with a spoon. My son commented that he loved it (mission accomplished!) and that he’d like to top it with granola and perhaps other things and make it an official “bowl” vs. a smoothie one drinks. Personally I would have thinned it out and just made it a drinkable smoothie, but the idea intrigued me and I made it again and topped it with a variety of fruits and nuts and seeds. Sure enough it was delicious and it was kind of fun to not just drink breakfast! You can certainly make this your own by varying the frozen fruits you use.Let me know how you enjoy it and what combinations you use.Buon Appetito!
