Vegan Mashed Sweet Potatoes
What’s better or more comforting than mashed potatoes? They’ve been a comfort food forever, but typically mashed potatoes consist of white potatoes, butter and cream – NOT a healthy addition to your diet. Sweet potatoes, however, are very healthy. They are rich in fiber, full of vitamin A, but also rich in vitamin Bs, C, and minerals such as manganese, phosphorus and potassium. Including sweet potatoes, most especially the purple variety, are an excellent addition to a healthy diet. This recipe is simple, creamy and delicious. Try it instead of the old fashioned mashed potato recipe and see what you and your family think. Here you have a favorite that provides excellent nutrition but will still make you and your family feel satisfied. Ingredients
- 2 large sweet potatoes peeled and roughly chopped
- 1/2 cup full fat coconut milk
- 1 sprig of rosemary
- Salt and pepper to taste
Instructions
- Add peeled and chopped potatoes to a steamer. Bring the water under the steamer to a boil. Reduce heat to a fast simmer and cook until the potatoes are fork tender. This takes about 5-8 minutes. Remove the potatoes from the steamer.
- Heat up the coconut milk in a pot, and add potatoes back in. Mash with a masher, adding in the rosemary, salt and pepper.
- Serve and enjoy!
