Gluten-free Chocolate Drop Almond Butter Cookies

Gluten-free Chocolate Drop Almond Butter Cookies
A patient is responsible for allowing my daughter and I to create this recipe. The patient asked if I couldn’t please come up with a healthy version of peanut butter sugar cookies with a Hershey’s kiss in the middle.I think most of us have seen such cookies and you can imagine all the refined sugar, white flour and dairy products the traditional ones contain. I was very excited to do some research and end up with this very easy, grain-free, refined sugar-free recipe that is moist and delicious.I hope this will be a new favorite cookie recipe. You can substitute fruit-sweetened jam for the chocolate if you like. Please let me know how you enjoy these.

  • ¼ cup organic almond butter or peanut butter
  • 2 Tablespoon coconut oil
  • ¼ cup coconut sugar
