Chocolate Peanut Butter Rice Krispy Treats
Who has never had a rice krispy treat? Not many Americans I’d imagine. They are easy to make, loaded with sugar and butter, unfortunately, but you have to admit, adding chocolate on top was definitely a good idea. Recently we were traveling and a coffee shop had them. The serving was HUGE. I don’t often crave dessert, but this just looked good. It was probably the generous amount of chocolate on top!I looked at my daughter and suggested we try and make them without sugar, dairy, high fructose corn syrup, etc, etc. Not surprisingly I wasn’t the first to think of it. There were several recipes on line that we looked over, and then created our own version.I like the fact that our recipe has zero sugar, dairy or gluten, and uses organic brown rice krispies and organic peanut butter. They’re very delicious, yet very easy to make. We hope you enjoy them!

Ingredients
  

Rice Krispy Base

  • ¾ cup creamy organic no sugar peanut butter (if avoiding peanuts, try almond butter or sunbutter)
  • 1/3 cup raw honey
  • ¼ tsp sea salt
  • ½ tsp pure vanilla extract
  • 3 cups crispy organic brown rice cereal

Chocolate Peanut Butter Topping

  • 1 1/2 cups 6oz Lilly’s stevia sweetened dark chocolate – either the bar or the chips
  • 1 1/2 Tablespoons creamy organic no sugar peanut butter

Instructions
 

Rice Crispy Base

  • Line an 8 x 8” or 9 x 9” square glass baking pan with parchment paper. Lightly grease with avocado oil and set aside.
  • On the stove top over medium-low heat, melt together the honey and peanut butter, stirring until combined (be very careful to not overheat).
  • Remove from heat and stir in the sea salt and vanilla extract until combined.
  • Add the crispy rice cereal to a large clean & dry mixing bowl.
  • Pour peanut butter mixture on top of the cereal and stir until completely combined.
  • Pour mixture into the prepared baking pan. Use a greased spatula to spread it until the top is even and smooth.

Chocolate Peanut Butter Topping

  • Melt the chocolate and peanut butter together on the stove top over medium-low heat. Stirring until just combined; be careful to not overheat.

Assembly

  • Pour the topping over the rice crispy treat base, using a spatula to spread it evenly and smoothly.
  • Place treats in the refrigerator for 60 minutes (or in the freezer for a shorter chill time).
  • Remove 5-10 minutes before serving to let them warm up slightly before cutting or the chocolate will crack. Serve at room temperature.
  • Store in an airtight container in the refrigerator.
