Healthy Vegan Burrito
The perfect burrito bowlI love “meals in a bowl”. All the flavors merge together and you have as many options as you have vegetables in your refrigerator! For that matter, you have grain options as well. Rice is the standard grain used, but you can try quinoa as well. Beans too can be changed up. Black beans are the classic, but pinto or cannellini would also work well. This bowl includes the traditional bell peppers, red onion, black beans and avocado, but if for some reason you prefer mushrooms, sauteed kale or spinach, plus some sweet potato, have at it!Your imagination and the contents of your pantry can dictate the ingredients – have fun and let us know any combinations you enjoy.

Ingredients
  

  • 2 organic bell peppers red, yellow or green
  • 1 organic medium red onion
  • 1 15 oz can organic black beans rinsed
  • 1/2 cup organic brown or black rice Optional: quinoa
  • 1 cup organic cherry tomatoes
  • 1 organic avocado
  • 1/4 teaspoon organic Himalayan sea salt
  • 1/4 teaspoon organic chili powder
  • 1 teaspoon organic fresh garlic minced
  • 1 tablespoon organic avocado oil
  • Optional: organic cilantro parsley and/or chives for garnish.

Instructions
 

  • Bring 1 cup of water to boil on the stove top and add in the 1/2 cup rice, simmering until all of the water is absorbed. [Note: to remove the most arsenic from rice follow these instruction: rinse the rice several times in a sieve under cool running water. Cook the rice in about 5 cups of water until it’s tender and then drain off the remaining water.]
  • Spiralize bell peppers and onions. If you do no have a spiralizer, cut the veggies into thin, bite-sized strips.
  • In a medium saucepan heat the avocado oil, add the bell peppers, onions, salt, garlic, and chili powder. Toss the veggies so that they are evenly coated with the spices and cook until tender.
  • Slice the cherry tomatoes in half, wash & rinse the black beans, and slice the avocado.
  • Assemble the burrito bowl with the rice, sauteed veggies, black beans, tomatoes, and avocado. Garnish.
  • Enjoy!
