Best Hummus Recipe
Hummus “seems” like it would be so easy. You can “cheat” and get cooked garbanzo beans, that plus a food processor or blender should make the job quick and easy, right? Well as much as I love hummus I was having trouble finding a recipe that worked. There really are only a few ingredients in hummus, which confused me more as to why I couldn’t make a version at home that me and my family loved. Recently I’ve been cooking all my own beans from scratch to avoid any chemicals coming from boxes or cans. I know, I’m always taking it to the next level :-). But, my frustration grew as I made the effort to soak and cook garbanzos, only to have my family dislike the final product. I had to agree. I tried to “salvage” it with more lemon juice, etc, but no good.Enter our patient Janette B. to save the day! Janette loves to cook and we frequently exchange our new favorite recipes. She mentioned a new hummus recipe she had been enjoying courtesy of her husband’s cousin Patti. And isn’t that the way cooking should be – an exchange with friends and family of nourishing recipes that delight the palate AND keep us healthy?Kudos to Patti – this recipe is a keeper! She also shared a fun tip to make the hummus smoother, which I’ll admit I haven’t tried yet. It’s listed in the “method” below.

Ingredients
  

  • 1 cup cooked organic garbanzo beans - boxed or canned is fine
  • 1/4 cup pure filtered water
  • 1 -2 medium cloves organic garlic depending on your garlic palate
  • 1 Tablespoon organic tahini
  • 1 organic lemon juiced, can use more to taste
  • 1/4 teaspoon organic cumin
  • 1/8 teaspoon cayenne pepper
  • Himalayan sea salt to taste

Instructions
 

  • Open a can or box of garbanzo beans; rinse and drain thoroughly.
  • (Optional) Pour the beans into a saucepan with a cup or more of water plus 1 -2 tablespoons of baking soda. Bring the beans to a boil and then let them stand for about 20 minutes. Pour the beans into a strainer and rinse them in cold water. This will separate the beans from the shells, making for a smoother hummus.
  • Place the garlic into your food processor and pulse a few times to break it up.
  • Add the rest of the ingredients plus about half the water and blend until very smooth. Add more water as needed to attain desired consistency. It will take about 1/4 cup, but start with 1/8 and add more as needed.
  • Season to taste.
  • Put the hummus in a bowl and drizzle some olive oil and either paprika or cayenne pepper to give it a little color.
