Raw Vegan Cake Pops
Traditional cake pops are popular these days for kids and adults. It’s basically frosted cake in the shape of a ball that’s placed on a stick to look like a lollipop. Unfortunately the typical version is a nightmare food filled with sugar, refined flour, artificial flavorings, colorings, etc. We put them in the “Frankenfood Category” – avoid at all costs!If only there was a healthy version… There is now! I created one that has the fun of still being a sweet, chewy ball on a stick and it’s coated with chocolate “frosting”. But…this version is filled with dates, nuts, cacao and coconut. It has no refined sugar, no grains and every ingredient is very healthy because it has vitamins, minerals, fiber, healthy fat and protein. You’ll still love the taste and your children and party guests won’t miss the bad ingredients one bit. In fact they’ll probably thank you for serving a dessert they actually feel good after eating! It’s been tested on children and adults and everyone loves it.

Ingredients
  

Dough:

  • 1 cup raw organic cashews
  • 1 cup raw organic almonds
  • 1/2 tsp. vanilla
  • 1/8 tsp. Celtic sea salt perhaps try a bit more to taste
  • 1 1/2 cups organic dates pitted

Chocolate “frosting”:

  • 1/2 cup organic unrefined coconut oil liquefied
  • 3/4 cup organic cacao powder
  • 1/4 cup organic maple syrup perhaps try more…

Instructions
 

  • Process nuts until they are in small pieces. Add salt and pulse. Add vanilla and dates until a sticky dough forms.
  • Roll dough into small balls, approximately 1″ to 1 1/4″ in diameter. Place on a plate lined with parchment paper and freeze until fully hardened. Meanwhile whisk all chocolate “frosting” ingredients in a bowl.
  • Once cake balls are fully hardened, remove from freezer and dip each in chocolate until fully coated. After you have fully coated each one, add the stick to each ball to create a pop. If there’s extra chocolate left over, consider double dipping!
  • Place in refrigerator until you’re ready to enjoy!
