Vegan Root Vegetable Mash
Carrot, Parsnip, Turnip Mash!
Root vegetables are in season during the Fall and make us think of Thanksgiving and the Holidays. This mash is pretty to look at with the orange and light yellow colors, and the creamy texture makes it feel as if you were cheating with the butter and heavy cream so typically called for in such recipes. My mother would make a mash with orange juice and cinnamon that had more of a dessert feel when I was a kid. But as a dairy lover I always preferred the creamier texture associated with a recipe akin to mashed potatoes. Now, with optimal nutrition always on my mind, I created a much healthier alternative with anti-oxidant, anti-inflammatory rich carrots, along with the high fiber and vitamin C content of turnips and parsnips. This is an easy recipe to make and your diners will never know it’s missing the butter and cream!

Course Side Dish

Ingredients
  

  • 5 organic carrots about 3 cups – sliced
  • 1 large organic parsnip about 2 cups – sliced similar to carrot
  • 1 organic turnip about 1 cup – cut in pieces of similar size as other vegetables
  • The ratio of each ingredient is 1 part turnip to 2 parts parsnip to 3 parts carrot. As an example if your cut up turnip measured 1 cup, then you would balance it with 2 cups of parsnips and 3 cups of carrots.
  • 1/4 cup butter flavored extra virgin olive oil or vegan margarine melted unsalted. You could use any light oil such as organic avocado oil as well.
  • 1/4 to 1/2 cup organic coconut cream – from a can or box. Start with 1/4 cup and add more depending on the creaminess you desire.
  • 1/8 teaspoon nutmeg
  • Pinch of cayenne
  • Salt and pepper to taste

Instructions
 

  • Steam vegetables until fork tender but not mushy.
  • Combine oil, coconut cream and spices.
  • Pour over vegetables and mash until vegetables are broken up but still have some chunkiness.
