Curried Lentils
Curry is a healthy spice the has robust flavor and lends a nice sophistication to this simple to prepare meal. You can use more or less curry depending on whom you cook for. The coconut milk will “dilute” the intensity of the curry flavor, so taste before you serve and add more if you wish. To boost the nutrition further, consider adding broccoli, Brussels sprouts, chopped kale or other healthy green vegetable. Basically the more greens and the more vegetables you can get in any meal, the better, so use what you have. Chopping any vegetable in small pieces will allow it to cook faster. This easy meal has a nice blend of plant based protein in the lentils, along with healthy fats and nice complex carbohydrates.
Ingredients
- 1 cup of dry organic lentils
- 2 cups organic vegetable broth
- 4 large organic carrots diced
- 1 medium organic yellow onion diced (about 1 cup)
- 1 Tbsp curry powder
- 2 cloves organic garlic minced
- 1 Tbsp organic avocado oil
- 1 can organic coconut milk
- 1 cup dry organic quinoa
Instructions
- Chop the veggies.
- In a large skillet, heat avocado oil over medium heat
- Transfer the carrot to the skillet first. Sauté the carrot for about five minutes, then add in the garlic and onion. Sauté until tender.
- Mix in the curry powder, and add the lentils to the skillet.
- Add broth to the skillet and bring the mixture to a simmer for about 15-20 minutes, until the lentils have absorbed the broth and are tender.
- While the lentils are simmering, bring 2 cups of water to boil and cook the quinoa.
- Mix in the can of coconut milk to the lentil vegetable mixture, and allow to simmer until some of the coconut milk has cooked off.
- Serve together on the plate, or top the quinoa with the lentil vegetable mixture. You can chop some parsley or green onion to make the dish “prettier” for serving.
