Strawberry Oatmeal Bars
There are many recipes available for oatmeal bars. But there aren’t many that are truly healthy, boasting delicious, soft, chewy sweetness without any gluten, dairy or sugar. Our clever Registered Dietitian created these lovely, very simple bars with a few easy ingredients. The filling doubles as a delicious jam by the way, so you can consider making extra and enjoying it where you’d enjoy your favorite jam or jelly. This one has zero sugar or preservatives, but is addictively delicious. These bars are sure to be a hit and you can feel completely guilt-free enjoying them. In fact, it doubles as a breakfast bar, not just a snack or dessert. Yes, you can make them a la mode for specials occasions with some coconut or cashew vanilla “ice cream”, in case you were wondering! Let us know how you enjoy them.

Ingredients
  

  • 1 cup organic almond flour
  • 1/2 cup organic coconut sugar
  • 1/2 cup Miyoko’s vegan butter or organic refined coconut oil
  • 1 1/2 cups organic gluten free oats
  • 1 tsp baking powder
  • 3 cups organic strawberries fresh or frozen
  • 2 Tablespoons organic lemon juice
  • 2 Tablespoons organic chia seeds

Instructions
 

  • Preheat oven to 350 degrees. Line an 8 x 8 inch baking dish with parchment paper.
  • On the stove top combine lemon juice, strawberries, and chia seeds over low heat in a medium pan.
  • Mash the berries to your desired consistency, and stir until the lemon juice is absorbed and the mixture has thickened.
  • Put aside to cool.
  • In a medium bowl, combine the dry ingredients, then mix in the melted butter or coconut oil.
  • Transfer half of the oat mixture to the baking dish, and press to form a flat crust.
  • Top with the strawberry mixture and even it out.
  • Sprinkle the remaining oat mixture over the top of the strawberries.
  • Bake for 25-30 minutes until golden brown.
