Vegan Creamy Tomato Soup
Does tomato soup remind you of being a kid? It’s definitely a “comfort food” in my book, yet the traditional version typically doesn’t have the healthiest ingredients and truth be told, it’s rather bland. This recipe is courtesy of our Registered Dietitian, Rachel, and is completely luscious and fresh with a beautiful Italian flare courtesy of the basil and Italian herbs. There’s no dairy but the coconut cream makes you think there’s some decadent heavy cream in there. This soup is sure to be a family favorite. It’s pretty quick to make and couldn’t be easier. Ingredients
- 4 pounds organic Roma or beefsteak tomatoes quartered
- 1 yellow organic onion divided in quarters
- 5 organic garlic cloves peeled
- 1/2 cup fresh organic basil
- 1 cup organic coconut cream
- 1 cup organic veggie broth
- 1 Tbsp Italian seasoning
- 1 tsp salt
Instructions
- Preheat oven to 400 degrees and line two baking sheets with parchment paper.
- Place the tomatoes, onions, garlic and basil on the baking sheets, toss with a drizzle of olive oil, and roast for 30 minutes
- Combine the veggies with the broth, coconut cream, salt, and seasoning in a high-speed blender or using an immersion blender.
